Coconut Chicken Almond Curry with Naan and Basmati Rice





With veggies too!

This is how I do it. I take short cuts. ;)

Veg oil or Ghee for frying
2 chicken breasts
1 small onion or large shallot
garlic galore
3 medium to small white potatoes
Any assortment of veggies you want. Frozen Mixed works well. (My batch usually has mixed veg, potatoes, onions, mushrooms, and sometimes broccoli.) At least 2 cups worth of veg total.
1 can tomato paste
2-3 tablespoons good curry powder (the more you use the "hotter" it is)
1 can coconut milk
1 small onion or shallot

Wash potatoes and put them in the microwave and bake them. Trust me. Saves TONS on cooking time.

Dice onions, garlic, and chicken. Set chicken aside.

In a stock pot or dutch oven (heh heh), add ghee or veg oil and turn heat on high. Get oil very hot then reduce heat to med/low and add shallots/onions. Saute until almost soft and add chicken and some salt and pepper. When chicken is almost golden, add mushrooms and let mushrooms get softer too.

Add curry powder and coat the fuck out of everything.

Add in mix veg and about 1 1/2 cup water. Turn heat up to boil and add tomato paste. Bring to a boil and then add coconut milk. Simmer about 1 hour.

Viola. Steam some rice to put underneath and get a bag of Naan. :)

In this batch, I added about 1/4 cup of toasted almonds to the batch when I added the coconut milk.
